Can I connect two UX3600's to the same PC using two separate USB Ports or a Hub?

No.

Pilot will only allow you to connect with one UX3600 at a time (multiple COM ports can't be used simultaneously).

If you need to monitor both processors in Pilot simultaneously a second PC is needed.
